​Fajeto: A Gujarati Kadhi Infused With The Sweetness Of Mango

Fajeto-A Must Try Summer Dish

Also known as Gujarati mango kadhi, this sweet, tangy and spicy side is best enjoyed with hot steamed rice. It is made with mango pulp, yoghurt and plenty of flavourful spices.

​Ingredients​

¾-1 cup mango pulp, 3 ½ cups water, 1 cup plain yoghurt, 2 tablespoon besan, salt to taste, ¼ teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon ginger paste, 1 small green chilli

​For Tempering:​

2 tablespoons Ghee, 1 teaspoon Cumin seeds, 3 Cloves, 1 inch Cinnamon stick, 1 Dried red chillies, 6-8 Curry leaves, ¼ teaspoon asafoetida

​Step 1​

In a saucepan, whisk together the yoghurt, gram flour, green chili, ginger paste, turmeric powder, red chili powder and salt. Whisk until properly combined.

​Step 2​

Stir in the mango pulp and water to the yoghurt mixture. Make sure everything is well combined.

​Step 3​

Turn the heat to medium and bring the mixture to a simmer. Cook for 10 minutes, stirring constantly.

​Step 4​

While the curry simmers, heat ghee in a small tempering pan over medium heat. Once hot, add the cumin seeds and let them sizzle for a few seconds.

​Step 5​

Add the cloves, cinnamon stick, and dried red chilli to the pan with the ghee and cumin seeds. Cook for 30-40 seconds.

Finally, add the curry leaves and asafoetida to the tempering pan. Immediately pour this hot tadka over the simmering mango curry. Serve with rice.
