​This Maharashtrian Raw Mango Curry Kairiche Saar Is Perfect Summer Side Dish

​​Raw Mangoes​

Packed with vitamin C and many other nutrients, raw mango is a staple in Indian households during summer. It is used to prepare drinks, curries, pickles and many other regional dishes.

​​Kairiche Saar​

This Maharashtrian curry is made from raw mangoes, rice flour and various spices and has a slightly tangy and spicy taste. Served with steamed rice, this recipe is great for lunch.

​​Ingredients​

2 raw mangoes, 1½ cups + 1 cup water, ¼ cup coconut, 1 tbsp rice flour, 1 green chilli, 4 tsp sugar, 1½ tsp – salt, 1 tbsp oil, ½ tsp - mustard seeds, 1 pinch asafoetida, ½ tsp fenugreek seeds, 6-8 curry leaves, ¼ tsp - turmeric powder, 2 tbsp - cilantro

​​Step 1​

Cut the raw mangoes into three vertical pieces. Cook them with 1½ cups of water on medium heat until the mangoes change colour, and the pulp becomes soft.

​Step 2​

Let the cooked mangoes cool completely. Then, separate the pulp from the skin and seeds, discarding the skin and seeds.

​​Step 3​

In a blender, combine the cooked mango pulp, coconut, rice flour, green chilli, sugar, and salt. Blend until you get a fine puree.

Heat oil in a pan on medium heat. Add mustard seeds and let them crackle. Add asafoetida, fenugreek seeds and curry leaves.

Pour the blended mango puree into the pan and add turmeric powder. Adjust the amount of water.

Bring the mixture to a gentle simmer and then turn off the heat.

Stir in chopped cilantro and serve the kairiche saar hot over steamed rice.
